Cottage Cheese Pancakes

1 cup Goat Peter’s cottage cheese or ricotta
4 eggs, beaten
1/2 cup flour, sifted
6 tablespoons butter, melted
1/2 teaspoon vanilla
1/4 teaspoon salt


Using a potato masher or hand mixer, mix cottage cheese or ricotta with the other ingredients.


Heat a griddle or frying pan. Melt a pinch of butter on the surface of the pan and swirl around to coat evenly, or alternatively, use a paper towel dampened with vegetable oil to wipe the hot pan down.


Spoon the mixed batter onto the hot surface, creating small pancakes.


Turn only once to cook both sides evenly.


Serve with fruit in its own syrup (such as strawberries, blueberries, peaches or pineapple), or top with apple sauce, fruit jam or maple syrup, along with a pat of butter.
